Authentic Buttermilk Biscuits

Instructions:

  1. Preheat the oven to 425*
  2. Line a baking sheet with parchment paper
  3. Combine the baking soda, baking powder, flour, and salt with a whisk
  4. Using a pastry cutter, cut the butter into the flour mix. It should resemble coarse crumbs in about 5 minutes.
  5. Make a well in the center of that mix and pour in the ¾ cup buttermilk, stir until just combined
  6. Lightly flour the counter and place the dough on the flour
  7. Using your hands, pat into a rectangle
  8. Fold this rectangle into thirds
  9. Turn the dough one-half turn
  10. Pat into a rectangle once again.
  11. Repeat steps 8,9,10 two more times
  12. Roll the dough to one-half-inch thickness
  13. Cut out 12 biscuits using a 2 ½ inch cutter, do not twist the cutter.
  14. Push it in and lift it out immediately
  15. Place the biscuits on the baking tray
  16. Using your thumb, make an indent in the top of each biscuit
  17. Brush the tops of the biscuits with buttermilk
  18. Bake for about 15 minutes.
  19. Serve warm
