Lemon Cheesecake No Bake

Instructions:

  1. Spray a 9×9 baking dish with nonstick spray
  2. In a bowl combine the melted butter, salt, and graham crackers, and mix until thoroughly combined
  3. Press the mixture into the bottom of the prepared pan
  4. Place the crust in the refrigerator while you make the filling
  5. In a small bowl combine the jello and boiling water and stir until the jello is dissolved
  6. Set to the side to cool to room temperature
  7. In a large bowl combine the cream cheese and Confectioners Sugar until the mixture is smooth
  8. To this bowl add the jello mixture, the heavy whipping cream, lemon juice, and lemon zest until it is completely blended
  9. Continue beating with the electric mixture until the mixture begins to thicken
  10. Pour the mixture over the Graham Cracker crust and place into the refrigerator until the filling has set, for at least 4 hours
  11. Slice into squares and top with Whipping Cream and lemon zest
