Low-Carb Bacon Cheeseburger Casserole

Ingredients:

  • 2 pounds of ground beef
  • 2 cloves garlic, minced
  • ½ teaspoon onion powder
  • 1 pound cooked bacon, cut into pieces
  • 8 eggs
  • 1 cup heavy whipping cream
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 (12 ounces) package of shredded Cheddar cheese, divided

Instructions:

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Heat a large skillet over medium-high heat.
  3. Cook and stir beef with garlic and onion powder until browned and crumbly, 5 to 7 minutes.
  4. Drain and discard grease.
  5. Spread beef onto the bottom of a 9×13-inch casserole pan.
  6. Stir in bacon pieces.
  7. Whisk eggs, heavy cream, salt, and pepper in a medium bowl until well combined.
  8. Stir in 8 ounces of Cheddar cheese.
  9. Pour the egg mixture over the beef and bacon.
  10. Top with the remaining 4 ounces of cheese.
  11. Bake in the preheated oven until golden brown on top, 30 to 35 minutes.
