Mexican Dorito Chicken Casserole

Instructions:

  1. Preheat the oven to 400*
  2. Line a baking sheet with foil
  3. Season the chicken breast with salt and pepper and place onto the foil lined tray
  4. Bake for 20 to 25 minutes
  5. Remove from the oven and set aside to cool
  6. Spray a baking dish with nonstick spray
  7. Put half of the crushed doritos as the bottom layer in the baking pan
  8. In a bowl, mix the soup with the milk
  9. Shred the chicken breasts using two forks
  10. Stir in the black beans and the can of rotel tomatoes, stir until blended well.
  11. Place a layer of shredded chicken and bean mixture on top of the Doritos
  12. Spread a layer of the soup over the chicken
  13. Sprinkle with cheese
  14. Repeat the layers one more time each and place pan into the oven
  15. Bake for 20 to 25 minutes, until the cheese is bubbly.
  16. The chicken has already been cooked so that is not a concern this baking time.
