Microwave Cooking:

  1. Remove the outermost leaves, but leave a few to prevent the corn from drying out.
  2. Cook in the microwave oven, at maximum power, for about 4-5 minutes for one ear, and 7 min for two ears.
  3. Let stand and cool for a few minutes before serving.

Prepare the Seasoning:

  1. While the ears cook according to the chosen method, combine the mayonnaise and cayenne pepper in a bowl.
  2. Grate the feta and add it to the bowl.
  3. Spread this mixture over the hot corn on the cob. For an even more Mexican flavor, serve the corn with lime wedges.
