Instructions:
- Preheat the oven to 400*
- Cover a rimmed baking tray with aluminum foil and spray with a nonstick spray
- Cut the potatoes in half and place in a bowl
- Add the Olive Oil to the bowl and toss the potatoes
- In a medium bowl combine the Italian Seasoning, Breadcrumbs, and Shredded Parmesan Cheese
- In another bowl melt the butter
- Dip each pork chop in the butter and then dip in the breadcrumb mixture, coating each side
- Place the pork Chops on the baking tray
- Add the coated potatoes to the tray around the Pork Chops
- Season the Chops and the Potatoes with Salt and Pepper
- Place the tray in the oven and bake for 35 to 45 minutes until the Pork Chops are cooked through
