Ingredients:
- 1 lb shrimp
- 1–4 sweet potatoes
- Paleo seasoning
- Tomatoes
- Avocado
- Spinach
Directions:
- Preheat oven to 400F.
- Make holes around the sweet potato with a fork.
- Place the sweet potato on the baking tray.
- Depending on the size of the sweet potato, bake for 50-60 minutes. It should be supple.
- Remove it and keep it in an airtight container if you’re storing it.
- After washing the shrimp, season them with 1 tablespoon paleo seasoning blend.
- A baking sheet should be sprayed or lined.
- Add shrimp.
- Cook for 15 minutes. Avocado, red pepper flakes, sautéed spinach, and tomatoes are served on top.
