These potatoes are easy to make, crispy on the outside, and tender in the middle.
They’re delicious, tasty, appetizing, and mouth-watering, I used to cook them on every busy working day .
Ingredients:
- 1 ½ pounds Yukon Gold potatoes, peeled and cut into 1-inch cubes (about 3 cups)
- 1 Tablespoon Kosher salt
- 3 Tablespoons vegetable oil (See Tip 2)
- ¼ teaspoon freshly ground black pepper
- 1 large onion, chopped, minced (about 1-½ cups)
- Chopped parsley or chives as desired for garnish
Instructions:
- Boil potatoes in water salted with 1 Tablespoon of Kosher salt for about 5 minutes just until they start to become tender, then drain it well.
- Heat vegetable oil or any kind of oil in a large skillet over medium-high heat.
- Add potatoes and cook stirring now and then for 10 minutes.
- Add pepper and onions.
- Continue cooking, stirring, until the potatoes are crispy on the outside and the onions are perfectly browned, about 15 to 20 minutes.
- Garnish with minced parsley or chopped chives depending on the need.
