Ingredients:
- 5 large eggs, room temperature
- 2 cups (one pint) sour cream, room temperature
- 4 8–ounce packages cream cheese, room temperature
- 8 tablespoons (one stick) unsalted butter, room temperature
- 1 1/2 cups sugar
- 2 tablespoons cornstarch
- 1 1/2 teaspoons vanilla extract
- 1 teaspoon fresh lemon juice
- 1 teaspoon grated lemon zest
Instructions:
- Preheat the oven to 375°F.
- Next wrap the springform pan with one large piece of heavy-duty aluminum foil, covering the underside of the pan and extending all the way to the top.
- Repeat with another sheet of foil for insurance.
