Easy Tex-Mex Casserole


  • 1 pound 454 g ground beef
  • 1 medium yellow onion diced
  • 1 green bell pepper diced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1 cup 240 g salsa (I used a corn and black bean salsa)
  • 15.25 ounce/432 g can corn, drained
  • 8 ounce/227 g cornbread mix


  1. Preheat the oven to 400°F (204°C).
  2. In a skillet, cook the ground beef, onion, bell pepper, cumin, and salt until the beef is cooked through and the onions are translucent.
