Pecan Pie Cheesecake

Ingredients:

Crust:

  • 2 cups of graham cracker crumbs either store-bought or used a food processor to create fine crumbs from whole graham crackers
  • 1/3 cup light brown sugar-packed
  • 1/2 cup salted butter melted

Pecan Pie Filling:

  • 1/3 cup salted butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups pecans chopped
  • 1 cup light corn syrup
  • 1 cup granulated sugar

Cheesecake:

  • 2 8-oz packages of cream cheese softened
  • 1 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 1/2 tablespoons all-purpose flour
  • 1 tablespoon vanilla extract
  • 3 eggs
  • 1/2 cup sour cream

Pecan Topping:

  • 1/4 cup salted butter
  • 1/3 cup light brown sugar
  • 1/2 tsp vanilla extract
  • 1/4 cup heavy cream
  • 1 cup pecans roughly chopped
