Taco Stuffed Avocado Boats

Directions:

  1. Scoop off 2 to 3 tablespoons of flesh from the bottom of every avocado half, keeping the rest of the flesh intact.
  2. In a food processor, combine the excised meat, sour cream, lime juice, and 14 tsp salt. Purée until completely smooth, then put aside.

  5. Heat the oil in a medium skillet over medium heat. Sauté for 3 minutes with the bell pepper and onion.
  6. Cook for 8 minutes, breaking up the meat with a spoon while it cooks.
  7. Toss in the salsa, cumin, chili powder, and the remaining 1/2 teaspoon salt.
  8. Cook again for 3 minutes, or until well cooked.
  9. Stir in cheese.
  10. Fill avocado halves with filling and drizzle with a combination of avocado and sour cream. cilantro on top
