The Authentic Woolworth Cheesecake

Instructions:

  1. Combine the jello powder mix with 1 cup of boiling water, and stir until dissolved
  2. Chill in the refrigerator until it is slightly thickened.
  3. Mix ¾ of the crushed graham crackers with the melted butter
  4. Press into the bottom of a 9 x 13 baking dish
  5. Save the remaining crumbs for use as a garnish
  6. Beat the heavy whipping cream or evaporated milk until it is light and fluffy
  7. In another bowl, beat the cream cheese with the sugar and the lemon juice until it is completely smooth
  8. Add the thickened jello and slowly mix in with the whipped evaporated milk.
  9. Spread the filling over the prepared crust and sprinkle the remaining crumbs over the top
  10. Chill for two hours before serving.
