CHARRED CORN SALAD

Directions:

  1. Heat grill on medium. In a bowl, toss red onion, chile, lime juice, oil, and ½ teaspoon each salt and pepper.
  2. Grill corn, turning occasionally, until charred, 10 to 12 minutes. Let cool, then cut corn from cobs.
  3. Add to onion mixture and toss to combine. Fold in cilantro and queso fresco.
